In spring, bees gather nectar from early blossoms, so honey has lighter and softer flavours around this time. In summer, mixed wildflowers create honey products with more balanced sweetness, and later in the year, deeper floral sources create stronger and richer honey. Because of these shifts in the season, honey will naturally change in taste and appearance. Lighter honey usually comes from early harvests, while darker honey comes from later ones. These things are normal and show that the honey has not been heavily processed or mixed.
